These white strings are also better known as chalazae. There are two such white strings on either side of the egg. The main purpose of these is to anchor the egg yolk so as to ensure that it is perfectly in position.
2 Presence of chalazae
The presence of chalazae clearly signifies that the quality of the egg is good and it is. If the chalazae are more noticeable, the eggs are very fresh. When the egg is very old, you will definitely notice that the chalazae will soon fade away and gradually disappear.
3 blood spots
At times, you may even notice blood spots with the chalazae when you slowly break the egg. The blood spots do not indicate that the egg is not edible. These blood spots are generally caused by blood vessels after erupting when the egg is formed. But, they can even be removed by using the tip of a knife and even spoon. And you can then eat egg.
